When I was a child, Sunday summer supper almost always included a banana sandwich. It was the staple that complemented leftovers from a home-cooked lunch. While I know that bananas aren't native to NC I always keep them on hand for a quick Sunday night supper fix. And for any non-southerners out there who may be wondering, what in the world is a banana sandwich? I say, wonder no more. Simply slap some mayonnaise and sliced bananas between two pieces of bread and voila! Sunday summer supper is served.
